NON SUN BLEACHED

Anthocyanins found in our Carrageen are antioxidants which give sea moss, blueberries, blackberries etc their dark hue. When sea moss loses its pigmentation turning gold, it is believed that it loses anthocyanin content. The purple aka non-sun bleached variety is championed as the most nutrient dense.

Irish moss is generally dark red-brown in colour but sunlight bleaches it to a white yellow colour as it dries.

This unbleached and natural ‘Carrageen’ name is said to originate from Carrigan Head, a cape near Northern Ireland, the title of which was inspired by the Irish word “carraigín,” which translates to “little rock” suiting this seaweed which grows in small tufts on the many rocks dotting the lower shore.


Irish Moss is rich in iodine and trace elements and is full of natural gelatine and has been used since the 15th Century and is a vegan alternative to gelatin.

 

Carragheenan

Irish Moss (Carrageen) is harvested commercially for its carrageenan - a sulphated polysaccharide molecule that is used in the food industry for gelling and thickening. It could well be in your ice cream, yogurt, frozen pizza or have been used for fining your beer or wine.

Carrageenans are widely used in the food industry, for their gelling, thickening, and stabilizing properties. As well as being used in dairy and meat products, Irish Moss is also added to the growing number of vegan and vegetarian diets.

Archaeologists estimate humans have been harvesting seaweed, like Chondrus crispus, for nearly 14,000 years. Evidence of red seaweed’s medicinal benefits in China can be traced back to 600 BC, and it was originally used as a food source around 400 BC on the British Isles.

Cough and Cold Remedy

The Red Seaweed of Chondrus crispus and have been used for Centuries in Ireland to relieve sore throats, coughs and colds.

25g of Carrageen / Irish Moss
600ml (1 pint) of water
Lemon, sugar, honey – to taste
· Soak 25g of Carrageen / Irish Moss in a bowl of cold water for 15 mins
· Place the soaked Carrageen / Irish Moss in a pan with 600ml (1 pint) of water
· Bring to the boil and simmer for 15 mins – the Carrageen / Irish Moss should break up into little pieces and the liquid thickens
· Strain the liquid through a sieve, making sure you get all the liquid through the sieve with the spoon
· Add Sugar, lemon, honey to taste
· Allow to cool and decant into a resealable jar/container
· This will keep in the fridge for around 1 week
· Other flavours such as ginger, vanilla essence can be added

 

Basic Carrageen / Irish Moss Jelly

The basic Carrageen / Irish Moss Jelly will also contain the goodness and can be made into delicious desserts.

Most Carrageen / Irish Moss dessert recipes have this basic recipe behind them.

· 20g of Carrageen / Irish Moss
· 900 ml (1.5 pint) of milk –or any non-dairy alternative that heats without curdling.
· 3 tablespoons of sugar
· Soak the Carrageen / Irish Moss in a bowl of cold water for around 30 minutes
· Put milk and soaked carrageen / Irish Moss into a pan
· Heat for 30 mins trying not to boil as this could take away nutrients. Stir from time to time to make sure the mixture doesn’t stick to the bottom of the pan
· The Carrageen / Irish Moss will become “gloopy” – gelatinous
· It will also coat the back of the wooden spoon
· Strain through sieve into a mixing bowl, pressing the mixture through the sieve. Discard the contents of the sieve (this can go into the compost bin)
· Add the sugar to taste and decant into bowls to set
· Add flavours like cinnamon and nutmeg to taste

POSTAGE

The packs will be posted out on the day of ordering (except weekends) and will be 48 HOUR TRACKED

We use Royal Mail 48 as the default. There are options for 24 tracked in the postage menu should you wish to get the tea sooner.

 

PACKAGING

We understand the value and importance of recyclable/biodegradable packaging and strive to make it 100% when possible.

At present we use recycled/recyclable boxes when needed, which help to keep the plants healthy and not too flattened in transit.

Areas for improvement are the plastic inserts. We strive to make these cellophane.

The amount of plastic we use is kept to a bare minimum for safe transit of the products, but we know more could be done. I will update this when we source new eco plastics to use.
